Rosemary Garlic Chicken

This baked chicken dish is full of flavor. It is simple and easy to prepare. It is a different take on baked chicken and do not be afraid of the garlic! It is not an overpowering dish and will be a hit with your guests.

Cook Time: 1 Hour & 15 Minutes

Servings: 4-6

Ingredients

  • 6-8 Chicken Leg Quarters
  • 1 Teaspoon of Salt
  • 1 Teaspoon of Pepper
  • 1 & 1/2 Teaspoons of Granulated Garlic Powder
  • 5 Sticks of Fresh Rosemary
  • 1/4 Cup of Olive Oil
  • 3 Teaspoons of Butter
  • 30 Cloves of Garlic (Whole/Peeled)
  • 1 & 1/2 Cups of Chicken Stock
  • 1/2 Cup of White Wine
  • 1 & 1/2 Cups of All Purpose Flour
  • 1/2 Teaspoon of Salt
  • 1/2 Teaspoon of Pepper
  • 1/2 Teaspoon of Cayenne Pepper

Directions

  1. Clean & pat dry the chicken leg quarters. Leave skin on.
  2. Season with salt, pepper, and garlic powder .
  3. In a bowl, add in all purpose flour, salt, pepper, and cayenne pepper. Mix well.
  4. In a deep casserole pot, on medium/high heat olive oil and butter. Add in 2 rosemary sticks.
  5. Coat chicken in flour mix and place in pot. Sear chicken (in batches! Do not overcrowd) on 3 minutes on each side and remove from pan.
  6. Spray an oven safe dish with non-stick cooking spray. Place chicken in the dish.
  7. In the same pot, add in garlic cloves. Cook 1 minute.
  8. Add in chicken stock, wine, and last rosemary sticks.
  9. Gravy will thicken. Taste for salt and pepper.
  10. Pour gravy over the chicken.
  11. Place in oven for 1 hour and 15 minutes at 375 degrees uncovered.
  12. Serve with mashed potatoes and/or vegetables.
