This is the ultimate side dish. The thinly sliced potatoes layered with cheese and potatoes makes this everyone’s favorite to accompany a meal!

Ingredients
- 2 Russet Potatoes (Peeled & Sliced Thin)
- 1 Teaspoon of Olive Oil
- 1/2 White Onion (Sliced Thin)
- 3 Tablespoons of Butter
- 1/2 Teaspoon of Salt
- 1/2 Teaspoon of Pepper
- 1/2 Teaspoon of Granulated Garlic Powder
- 1/4 Teaspoon of Red Pepper Flakes (Optional)
- 1 Teaspoon of Dried Parsley
- 1 Cup of Heavy Whipping Cream
- 2 Cups of Sharp or Extra Sharp Cheddar Cheese (Reserve 1/2 for top)
Directions
- Boil thinly sliced potatoes in water 5 minutes until almost tender. Drain and set aside.
- In a pan, heat olive oil. Add in onion. Sauté 2-3 minutes and set aside.
- In the same pan, add in butter, heavy whipping cream, salt, pepper, garlic powder, parsley, cheese, and red pepper flakes (optional). Bring to a boil. Add salt to taste.
- Spray a glass oven safe dish with non-stick cooking spray.
- Place a little sauce on the bottom.
- Add one layer of potato on top of the sauce.
- Add a layer of sautéd onions.
- Cover with sauce. Repeat layers of potato, onions, and sauce.
- Top with reserved cheese.
- Bake at 350 degrees for 30-40 minutes until golden brown and potatoes are cooked through.
