Cheese Pie reminds me of my childhood. This was a dish I had growing up in England. It remains a comfort food at my home and within my family. It is not a sweet dish or an overly cheesy dish! It a savory meal! Cheese Pie can be prepared a day before and popped in the oven whenever you are ready to eat! It is good for both lunch and dinner! For those Brits trying this out, it is great served with Heinz Beans!

Cooking Time: 50 Minutes (Divided)
Servings: 6
Ingredients (for the crust)
- 1/2 Cup of Bisquick
- 1/2 Cup of All-Purpose Flour
- 1/2 Stick of Butter (Cold)
- 1/2 Teaspoon of Salt
- 1/4 Teaspoon of Pepper
- 1/2 Teaspoon of Granulated Garlic Powder
- 1/4 Teaspoon of Dried Parsley
- 1/4 Teaspoon of Red Pepper Flakes (Optional)
- 1/2 Cup of Water (Cold)
Ingredients (for pie filling)
- 2-3 Russet Potatoes – Roughly 1 & 1/2 lbs. (Peeled & Boiled)
- 1 Large Onion – Roughly 1 & 1/2 Cups (Sliced Thinly)
- 1/4 lb. of Sharp Cheddar – Shredded (Preferably: Tillamook)
- 1/4 lb. of Extra Sharp Cheddar – Shredded (Preferably: Tillamook)
- 15 Stalks of Asparagus – Ends Removed/Chopped Small (Optional)
- 1/2 Teaspoon of Olive Oil
- 1 Teaspoon of Salt
- 1 Teaspoon of Pepper
- 1 Teaspoon of Granulated Garlic Powder
- 1/2 Teaspoon of Dried Parsley
- 1/4 Teaspoon of Red Pepper Flakes (Optional)
- 2 Tablespoons of Butter
- 1/4 Cup of Milk
Directions (for crust)
- Preheat oven to 350 degrees.
- In a bowl, add in Bisquick, all-purpose flour, salt, pepper, garlic powder, dried parsley, and red pepper flakes (optional). Mix.
- Shred (with a cheese grater) the cold*** butter. Mix into the flour mix.
- Add in the cold*** water. Lightly knead the dough. (The dough will feel sticky.)
- With a little oil, press dough into a greased dish to form the crust for the pie. Poke holes using a fork in the dough. (We use an 8 x 8 dish!)
- Bake the crust for 20 minutes. Remove from oven and set aside.
Directions (for pie filling)
- Put potatoes to boil in a pot of water.
- In a larger sauté pan, sauté asparagus in the olive oil on medium heat. Add in salt, pepper, garlic powder, dried parsley, and red pepper flakes (optional).
- After about 3-4 minutes, add in the sliced onion.
- Continue sautéing for 7-8 minutes. Turn off heat when the onions are translucent.
- When the potatoes are finished cooking, add in butter and milk. Mash the mixture up.
- Fold in the asparagus and onion mixture into the mashed potatoes.
- Add in half** of each cheese and stir into the mixture. Taste for salt & pepper.
- Pour the mixture into the crust and spread evenly. Add the remainder of the cheese on top.
- Bake for 30 minutes at 350 degrees. Remove from oven & let cool for 7-10 minutes before cutting.
- Serve with Heinz Beans to have the full British meal!
