My daughter, Radha, makes one of the best peach cobblers! Family and friends always ask her to make it for dessert in the summertime when peaches are in season. It is easy to prepare and is served best with vanilla ice cream. Enjoy!

Ingredients
- 1/2 Cup of Unsalted Butter
- 1 Cup of All-Purpose Flour
- 2 Cups of White Sugar (Divided)
- 3 Teaspoons of Baking Powder
- A Pinch of Salt
- 1 Cup of Milk
- 4 Cups of Peeled, Sliced, and FRESH Peaches
- 1 Tablespoon of Lemon Juice
- Several Dashes of Cinnamon
Directions
- Preheat oven to 350 degrees.
- Pour melted butter into baking dish. (I use a 8 X 11.5 glass dish)
- In a bowl, add the flour, 1 cup of sugar, baking powder, and salt. Mix well.
- In a saucepan, add the peaches, lemon juice, cinnamon, and the second cup of sugar (Use less sugar if the peaches are sweeter!)
- Bring the mixture to a boil on high heat. Keep stirring. When it is boiled, turn off the heat.
- Stir in the milk into the dry ingredients in the bowl. Don’t over mix!
- Pour the mixture over the butter in the baking dish. Do not stir/mix!
- Evenly scoop the peaches from the saucepan over the batter. Do not stir/mix! (The batter will rise over the peaches and make the crust!)
- Bake for 40-45 minutes until it is golden brown on top.
- Serve with vanilla ice cream.
